Spring: the sun, soil, water, and aromatic herbs come together to wake our olive trees, bringing out fresh sprouts and blossoms.

Summer: the dry heat with refreshing bursts of wind gently concentrates the oils inside the olives as they grow and mature.

Autumn: a soft mist from the Atlantic Ocean visits our groves a couple of times each month during the last weeks of olive ripening.
